2007 Del Fava Cabernet Sauvignon

 Our "Del Fava Family" label wines represent our version of 'reserve' wines - which are small lots of our hand-crafted wines from great local vineyards in the Alexander Valley.
This Cabernet Sauvignon is HUGE! Blended as our "Bordeaux Style" red - with a little Syrah in the mix. Bottled in April '09 - this Cab is smooth & drinkable now with promising depth and complexity of both aromas and flavors. The wine is dark red in color with impressions of ripe plums, Bing cherries, cigar box and toasty oak. After16 months of barrel aging in 28% new French and European oak barrels, the final blend was lightly fined with egg whites and bottled.
This wine is a classic example of an Alexander Valley cabernet, showing subtle notes of sweet plums and ripe dark cherry aromas and layers of earth, forest floor, herbs and cedar. The mouthfeel is medium to full with balanced acidity and firm, slightly dusty tannins. This wine will age well for the next 5-8 years.
